Vacay Prep!

I am going to let the pictures do the talking!  I have been prepping for vacation for almost 2 weeks!  Little things here or there to help the 16 hour drive and week away {hopefully} run smoothly!  I am prepared for sickness, car boredom, little treats, and hunger!  Check it out!

I also made my famous Super Food Meatballs (get the recipe here).  We plan to enjoy these as for dinner on the drive home instead of stopping - Saving MONEY and CALORIES!

April Fool's Day came and went.  It was fairly uneventful, but I wanted to do a little something for the kids.  So I found a simple idea that was a big hit!

I found the original recipe on Tasteofhome.com.  I used Tastefully Simple's Tropical Pound Cake instead of the Absolutely Almond Pound Cake, because that was what I had!  I baked the cake in 4 mini loaf pans to give the look of a "sub" roll.  

Once the cakes were baked, it came together very easily in about 5 minutes!  I was on my way out the door for Zumba, so I quickly put it together!

Evelyn even got in on the action by enjoying one of the leftover meatballs.  I think she likes ice cream!
